Sweet and Sour Pork and Apple

Slow cooked tender and delicious this recipe makes a great addition to your slow cooker repertoire. Don’t be tempted to add extra liquid to this recipe. There is no mistake! Liquid comes from the pork and vegetables during cooking. Serves 6

1 kg pork pieces
1 onion
2 sticks celery
1 carrot
1 red pepper
3 apples
1 tablespoon ground ginger
¼ cup honey
¼ cup DYC Cider Vinegar
¾ teaspoon chilli flakes
3 tablespoons cornflour
3 tablespoons water
Roasted peanuts
Celery leaves

Trim any fat from pork.

Peel onion, cut into eighths and separate layers.

Trim celery and chop into 1 centimetre pieces.

Peel carrot and cut into rings.

Core pepper and cut into strips. Core apples and cut into eighths.

Place carrots, celery, onion, pork, pepper and apples in the slow cooker.

Mix ginger, honey, vinegar, and chilli flakes together.

Pour over pork mixture and mix into the ingredients in the slow cooker.

Cover and cook on LOW for 8 hours or HIGH for 4 hours.

15 minutes before serving, turn the slow cooker to HIGH.

Mix the cornflour and water to a smooth paste and stir into the pork.

Cook for 15 minutes. Serve with rice noodles, garnished with chopped nuts and celery leaves.
