DYC Fruit Chutney

Try adapting this recipe using fresh, seasonal fruit. Serve when cold. Store in the refrigerator. Makes approximately 2 cups of DYC Fruit Chutney

800 – 900g peaches or apricots
¼ cup brown sugar
¼ cup honey
¼ cup seedless raisins
5cm piece cinnamon stick
6 whole cloves
¼ tsp salt
¼ tsp freshly ground nutmeg
½ cup DYC Cider or White Wine Vinegar

Drain fruit and chop roughly.

Place fruit, sugar, honey and raisins in a saucepan.

Tie cinnamon and cloves in muslin and add.

Stir in salt, nutmeg and vinegar.

Simmer with regular stirring for about 30 minutes or until it begins to thicken.

Discard whole spices.

Pour into a container and chill.

Serve when cold.
